White Chicken Chili Soup

White Chicken Chili Soup Recipe
 
Makes 6 - 8 servings
 

In a soup pan, heat 7 cups of low sodium chicken broth (abt. 1 1/2 cartons)
to that add 1 cup of uncooked rice,
1 cup of freshly chopped cilantro,
and 2 tablespoons of white chili seasoning (abt. 1/2 a packet)
 
~ leave until it comes to boil. ~
 
In a separate pan add 1 teaspoon of butter
and 1 tablespoon of chopped garlic.
Then add 1 diced yellow onion
and 1 diced bell pepper (I used green).
 
~ lightly stir, and add salt and pepper to taste. ~
 
Then add 1 can of Southwest Corn,
1 can of Great Northwestern white beans,
an 1 can of white kidney beans (cannellini)
 
~ stir for a few minutes, then add to the boiled stock.
 
Serve with shredded white chicken (I used a rotisserie chicken) and lime tortilla strips.

Strawberry Trifle



Serves: 6
Preparation time: 30 minutes
Cooking time: 10 minutes for the sponge fingers. 10 minutes for the custard.

Ingredients:

For the sponge fingers
1 egg
45g caster sugar
60g plain flour

For the custard
2 eggs
1 tbsp caster sugar
300ml milk
Seeds of a vanilla pod or 1 tbsp of vanilla bean paste

For the trifle
200ml double cream
2 tbsps caster sugar
250g Sweet Eve strawberries, rinsed, hulled and cut into thin slices, plus extra whole strawberries, to decorate

Method:
 1. First make the sponge fingers. Preheat the oven to 200°C/390°F and line a baking sheet with baking parchment.

2. Whisk the egg and sugar in a big bowl until light and quite stiff. Sift half the flour over the mixture and fold in lightly. Fold in the remaining flour.

3. Spoon the mixture into a piping bag with a 1cm nozzle. Pipe the mixture onto the baking sheet in 5cm lengths, set apart because they expand while in the oven.

4. Bake in the preheated oven for 10 minutes, till golden. Remove from the tray and leave to cool on a wire rack.
 
5. To make the custard, beat the eggs, sugar and 50ml of the milk together in a bowl. Put the rest of the milk in a non-stick saucepan with the vanilla seeds or vanilla bean paste and bring to the boil. Set the milk aside to cool for 10 minutes then pour onto the egg mixture and mix well.

6. Strain the custard mixture into a clean saucepan and put back onto a medium heat. Keep stirring while the custard cooks and take off the heat when it is thick enough to coat the back of a wooden spoon. Set aside to cool.

7. Whisk the fresh cream with the caster sugar until it forms soft peaks.

8. To assemble the trifle, take a deep glass bowl and add alternate layers of strawberry slices, sponge fingers, custard and whipped cream. You may wish to arrange the strawberry slices so that you can see them in a row through the glass. Decorate the top of the trifle with whole strawberries and serve.

Some Of My Favorite Books

Some of my favorite books are about homes, families, memories and get-togethers. The author I most admire, that makes everyone want to be a homemaker and spend all day in the kitchen baking dainty cakes is the darling Susan Branch. I have several of her books, and have just finished her latest called A Fine Romance, Falling In Love With The English Countryside.

 
Maybe it just reminds me of my idyllic childhood growing up in the heart of England, in a charming village. Susan also has a blog which I really enjoy reading with a nice cup of tea. Handwritten books, like Susan's are a rare find. They make you feel like your reading a letter, and they feel more personal.
 
The most treasured books I have are lot of old family journals, with recipe clippings, and pictures of family get-togethers that were done by my late grandparents. Once you loose a lot of relatives like me, you learn how important keeping memories is. How To Keep Family Keepsakes is a wonderful book. After we pass away it's what keeps the stories and the memories of us passing along.
 

 
My husband and I also enjoy reading genealogy and history books together. We're reading about the beginning of time, The Story Of Christianity, How We Got The Bible and The Story of The Bible.

Our cover is a different version.
 
The reason being when we traced back my moms paternal grandfather's direct ancestors, we found that they lived in the town of Thorley, England and genealogy records show that their preacher was Francis Burley. For those who may not have heard of him, we discovered that he was one of the translators of the King James Bible.

For lighter reading, I also enjoy a good recipe book. My favorites are by Ina Garten, I could just move into her guest house, and be a taste tester. Her last book Barefoot Contessa Foolproof: Recipes You Can Trust is a good keepsake. I also DVR her TV show on the Food Network every day.
